StarDict has been ported to Mac OS X now.
Here is an abstract introduction of compiling stardict and building the package.
1. Install Xcode.
2. Read document.

3. Building.
Read https://live.gnome.org/GTK+/OSX/Building
And build gtk by following the instructions.
This is needed if zlib is not found later:
jhbuild build zlib
4. Compile stardict.
Edit dict/configure.ac, remove the "AM_GCONF_SOURCE_2" lines.
jhbuild shell
./autogen.sh
Replace "huzheng" in the next command line to your own username:
./configure --prefix=/Users/huzheng/gtk/inst --sysconfdir=/Users/huzheng/gtk/inst/etc --mandir=/Users/huzheng/gtk/inst/share/man --disable-espeak --disable-spell --disable-gucharmap --disable-dictdotcn --disable-festival --enable-darwin-support --disable-scrollkeeper --disable-tools
make
make install
5. Bundling.
Read https://live.gnome.org/GTK+/OSX/Bundling
And build StarDict.app by following the instructions.
cd dict/mac_dist
gtk-mac-bundler stardict.bundle
After created the package as ~/Desktop/StarDict.app, you can use this:
tar -cjvf stardict-3.0.5-beta1-macosx.tar.bz2 StarDict.app
6. Install.
To install, unpack the archive, then drag and drop to the /Applications folder.
To run in place, unpack and click.
