需求描述/ Description
InferNex 自 26.6.0 之后合入了 eagle-eye 分布式追踪（tracing）及 proxy-server accessLog 等能力。需要 InferNex-Bridge 对齐 chart 侧行为：支持可选部署 eagle-eye tracing collector，并在 Bridge 管理的引擎 workload 注入 OTLP/initContainer；同时 proxy-server 内置资产默认排除
/health,/metrics访问日志，与 InferNex Helm chart 一致。对应实现见 PR：https://gitcode.com/openFuyao/InferNex/merge_requests/225

补齐 Bridge 与 InferNex 主 chart 在可观测性（tracing）与 proxy 运维默认行为上的能力缺口，便于 InSvc/LLM 路径统一使用同一套增强组件。

spec.components.eagleEye.tracing默认关闭，对齐 InferNex chart（global.tracingEnabled/eagle-eye.tracing.enabled默认均为 false），不影响既有集群global.tracingEnabled）负责；Bridge 本迭代不安装 EnvoyFilter交付个人或团队：如团队、SIG等/ Delivery organization: such as teams, SIGs, etc.
